According to the Holman Bible Dictionary, a cherub is a member of a class of winged angels who functioned in the book of Genesis as guardians. The word cherub is Hebrew. The plural form is cherubim. Cherubim are most frequently represented as small angels, children with wings, with chubby faces and rosy cheeks. This is called an artistic convention. It is not based on an historical or theological research, but merely on the fact that human beings want cherubs to look cute. So artists make them look cute.
